1/4 vanilla pod
1/2 tsp ground cardamom
1 tbsp. NordicNordic lingonberry powder
1/4 tsp rose water
1/4 cup chia seeds
2 Medjool dates, pitted and chopped
a small pinch of sea or Himalayan salt
2/3 cup unsweetened coconut milk beverage (eg. So Delicious)
1/4 cup organic cranberry juice
1/2 cup raspberries 1
/4 cup cranberries
freeze-dried raspberries (optional)
Scrape vanilla seeds into a bowl. Mix in cardamom, lingonberry powder, rose water, chia seeds, dates and salt. Whisk in coconut milk and juice. Place half of the raspberries into a jar, top with the chia seed mixture, and place in the fridge for at least an hour (or overnight).
Top with more coconut milk, cranberries, freeze-dried raspberries, and remaining raspberries.
