Gingerbread granola

2 1/2 cup gluten free oats

½ cup pecan nuts

½ cup walnuts

½ cup almonds

2 tsp Organic vanilla powder

1 - 1 1/2 tbsp NordicNordic - ginger bread spice mix

3-4 tbsp Coconut oil / ghee

4 tbsp Maple syrup 

NordicNordic gingerbread spice mix

2 tsp Ceylon cinnamon

1 tsp cardamom

1 tsp clove

1 tsp ginger

1 tsp bitter orange peel 

1 tsp NordicNordic Chaga tea cinnamon

Heat oven to 300 degress F. Melt ghee & crush nuts in a blender. Mix crushed nuts and the rest of the ingredients  together until evenly mixed. Spread evenly on a baking sheet and bake for 35-45 min in the middle rack until beautifully golden. Mix granola on the sheet about half way through baking. 

Store in a dry place, preferably in a glass jar.
