Cocoa Chaga Snack Bars

Cocoa-Chaga Snack Bars (makes about 10 bars)

9 pitted medjool dates, minced

2 tbsp coconut oil

1/4 cup water

2 tbsp unsweetened almond butter

1/2 tsp salt

1/4 cup unsweetened desiccated coconut

1/4 cup sesame seeds

1/4 cup pumpkin seeds

1/4 cup sunflower seeds

1/2 cup rolled oats

3 bags NordicNordic Vanilla Chaga

2 tbsp unsweetened cacao powder

Mix dates, oil and water in a small saucepan. Gently boil for about 10 minutes, until the mixture forms a paste. Mash with a fork if needed. Mix in almond butter and salt.
Meanwhile, mix rest of the ingredients in a large bowl. Mix in the date mixture until well combine. Line a shallow small pan with parchment paper and press mixture into the pan, about 1/4 inches thick. Freeze for 20 minutes and cut into bars. Store in fridge or freezer.
