Overnight whipped lingonberry and cranberry porridge (serves 1)

2 tbsp chia seeds

1/4 cup rolled oats

1/4 cup organic cranberry juice

1/4 cup coconut water

1/3 cup unsweetened plant based milk (for example coconut or almond)

1/2 cup cranberries + more for serving

2 tsp NordicNordic lingonberry powder

1/2 tsp vanilla extract

sweetener of your choice, to taste

Combine all of the ingredients, together with a pinch of salt in a sealable jar. Mix to combine, and let sit in the fridge overnight.

Before enjoying, place all of the ingredients into a blender and mix until smooth, adding more liquid if needed (mixture should be thick). Place in a bowl and top with cranberries and additional lingonberry powder if desired.
