chaga mousse

Chaga-Lucuma mousse

3-4 servings

1 c cashews

2 tbsp organic lucuma

1/2 tsp Instant Chaga

8 medjool dates

3-4 tbsp chia seeds

1 1/2 tsp Ceylon cinnamon 

1 tsp ginger powder

3-4 tbsp coconut syrup

Oat / almond milk for liquid

Soak dates in warm water for about an hour and remove pits. Blend dates and cashews to a paste in a blender. Add milk, syrup and the rest of the ingredients and spices. Blend until mousse consistency. Serve in bowls and decorate with pomegranate seeds, NordicNordic lingonberry and coconut flakes.
